Chocolate Covered Strawberry Cake Balls

Did you salivate?


I've been hearing that cake balls were all the rage. Have you tried them?

I made these YUMMY, DELICIOUS balls of goodness yesterday.

I decided that I would make these for Madeleine to give her teachers for Valentine's day. I found a cute SCAL file to make a box (I haven't made one yet, that will be another post!) and I thought these would be perfect to put in them.

The strawberry cake balls were a hit! I had to hide them in the freezer under the bags of veggies so no one would find them. That's why you can see some condensation on them. I should have left some out to photograph. Oh well, we live and learn. I'm going to make some more for Valentines day. I'm thinking some more strawberry, maybe some lemon and triple chocolate. The teacher will pass Madeleine on to the next grade with rave reviews!

So proud of my girls

As I sit here and type, I feel so thankful and grateful for the things I have in my life. Sunday morning, a little boy died when his house caught fire. His family lost everything.

My sister-in-law knows the family. When David was telling us about it at breakfast this morning my girls really surprised me. They heard that there was a 2year old little girl who not only lost a brother, a home, but her clothing and toys. They jumped into action. Madeleine came down stairs carrying her Lucky dog (it does tricks and responds to voice commands) and said she wanted that little girl to have Lucky. That prompted Katie to bring down her Fisher Price doll house to give her. Books, stuffed animals and clothing followed. We are taking 2 bags of toys and clothing to Sweeny today.

I'm so proud of my girls!

Menu for 1/18-1/24

Howdy folks! Along with making myself new promises in the new year, I've decided to start posting my weekly menus. This will help keep me on track and hopefully help others in the process. If I get a recipe off the net, I'll link it. It it's mine and you want a copy, leave me a comment and I'll either post it or email it to you.

I'll give you a warning though, with a diabetic in the family, most of my menus are based around protein. We are a red meat loving family so just be forewarned!

So, here goes...

Monday - AM: Egg muffins(sausage), fresh fruit
PM: Turkey Meatloaf, sugar snap peas, salad
TuesdayAM: Boiled eggs, Fruit and Yogurt
PM:Texas Pot Au Feu, Veggies and baked potato
Wednesday Baked Oatmeal
PM:Bacon Ranch Slow Cooked Chicken served over whole grain, high fiber noodles; steamed veggies
Thursday AM: Egg Tacos
PM:Leftovers
FridayAM:Cereal, Fruit, Yogurt
PM:Frozen Pizza & salad

New Year, New Resolve...

I've been quite absent since Thanksgiving. I just realized I only made 2 posts in December. That's going to change. Granted, I was sick the ENTIRE month of December, but that's no excuse! I'm going to work very hard to get posts up from the Polar Express (which was AWESOME!), Christmas, and other random stuff.

Please bear with me. I'm also working on making Valentine decorations, planning Daisy Troop meetings, and trying to keep up with laundry!

I'm headed to Hobby Lobby right now, so I'll be back soon.
